
Tonight’s recipe from the Gilbert Warriors Spirited Specialties Cookbook. Kelli Smith is the author. It’s very similar to something I cook for dinner on repeat. I added a can of Rotel tomatoes and green chiles to spice it up.
Ingredients:
1 pound ground beef
1/2 cup onion, chopped
1 envelope taco seasoning mix (I use this one https://amzn.to/3JMBWQF)
1 1/4 cup milk
3/4 cup Bisquick baking mix
3 eggs
1 cup cheese, shredded
Instructions:
Heat over to 400 degrees. Grease 10 inch pie plate. Cook and stir beef and onion until brown. Drain. Stir in seasoning mix. Spread on pie plate. Beat milk, baking mix, and eggs until smooth. Pour on top of meat mixture. Bake 25 minutes. Cover top with shredded cheese. Bake 8-10 minutes longer or until knife comes out clean. Cool for 5 minutes. Serve with lettuce, tomatoes or your favorite taco adornments.
